1. Turn the oven to 325 degrees and preheat.
2. Spray a cookie sheet with non-stick cooking spray.
3. Place each piece of squash, cut side down, onto the cookie sheet.
4. Place the sheet in the oven and bake for 35 minutes or until the squash is tender.
5. Remove the pan from the oven and allow to cool.
6. Spray another cookie sheet with non-stick cooking spray.
7. Saute the garlic and onion in a skillet over medium heat, until golden brown.
8. Add the next 4 ingredients and cook for 15 minutes or until the sauce has thickened.
9. Remove the strands of squash with a fork, being careful to keep the shells intact.
10. Layer the shells with a tablespoon of sauce, layer of squash, olives and mozzarella cheese.
11. Repeat until the shells are full and ingredients are used.
12. Sprinkle the tops of each with Parmesan cheese.
13. Bake the squash for 20 minutes or until the cheese has melted.
