Spaghetti Squash Casserole with Broccoli and Cremini Mushrooms

 

Ingredients -

1 (8-inch) Spaghetti Squash
1 cup chopped White or Yellow Onion
2 Garlic Cloves, crushed
1/2 pound sliced Cremini Mushrooms
Broccoli Florets, chopped
1/2 teaspoon Dried Oregano
Coarse Salt
Fresh Cracked Black Pepper, to taste
1 cup Cottage Cheese
1 cup grated Mozzarella Cheese
1/2 cup chopped Fresh Parsley
1/2teaspoon Dried Basil
Whole Wheat Bread Crumbs
Parmesan Cheese

 
Preparation:

1. Preheat the oven to 375 degrees.

2. Cut the spaghetti squash in half lengthwise.

3. Remove and discard the seeds and membranes.

4. Place the squash, cut sides down in a glass baking dish.

5. Bake for 30 minutes.

6. Remove from the oven and allow to cool to the touch.

7. Remove the flesh with a fork, and discard the shells.

8. In a large skillet, sauté together the onions, garlic, mushrooms, broccoli and spices.

9. Combine the skillet mixture with the squash and mix well to combine.

10. Pour the mixture into a 2 quart casserole dish that has been buttered.

11. Sprinkle bread crumbs and Parmesan cheese over the top.

12. Bake for 40 minutes uncovered.

13. Allow to sit for 5 minutes.

14. Serve.
