Spaghetti Squash Casserole with Mushrooms and Mozzarella

 

Ingredients -

1 (8-inch) Spaghetti Squash cut in half and oven roasted
1 cup chopped Yellow or White Onion
2 Garlic Cloves, crushed
1/2 pound Sliced Mushrooms
1/2 teaspoon Dried Oregano
Sea Salt
Fresh Ground Black Pepper
1 cup Ricotta Cheese
1 cup Mozzarella Cheese
1/4 cup chopped Fresh Parsley
1 teaspoon Dried Basil
Dash of Dried Thyme
1 cup Dry Bread Crumbs

 
Preparation:

1. In a large skillet, sauté the garlic, onions, mushrooms, salt, pepper and herbs in a small amount of cooking oil.

2. Sauté until the onions become translucent.

3. Add the tomatoes and cook until the liquid has absorbed.

4. Add the remaining ingredients and transfer to a buttered, 2 quart casserole baking dish.

5. Sprinkle the top with grated Parmesan, if desired.

6. Bake for 40 minutes in a 375 degree oven.

7. Allow to cool for 5 minutes.

8. Serve and enjoy.
