1. Turn the oven to 350 degrees and preheat.
2. Spray a large baking dish and a large baking sheet with non-stick cooking spray.
3. Place the squash on the baking sheet, cut side down.
4. Bake for 30 to 40 minutes or until tender when poked with a fork.
5. Remove the flesh and transfer to a large mixing bowl.
6. Add the butter and stir until the butter has melted.
7. Add the mayo, parmesan cheese, Monterey Jack cheese and stir to blend.
8. Pour the mixture into the baking dish.
9. Sprinkle 3 tablespoons of Parmesan cheese on top.
10. Bake until the cheese melts, which takes about 20 minutes.
