Spaghetti Squash Gratin with Sour Cream and Chives

Cooked spaghetti squash strands combined with fresh chives, sour cream, Romano cheese, sea salt and fresh ground pepper. Mixture is spread into casserole dish, topped with shredded Romano cheese and baked in preheated oven until cheese has melted.

Ingredients -
1 Spaghetti Squash
Salt
Fresh Ground Black Pepper
1 cup Sour Cream
2 tablespoons chopped Fresh Chives
1/4 cup shredded Romano Cheese
 
Preparation:

1. Preheat the oven to 400 degrees.

2. Place the squash on a baking sheet and cook until tender.

3. Remove the squash and cool to handle.

4. Cut the squash in half lengthwise.

5. Remove and discard the seeds.

6. Using a fork, remove the flesh into strands and place in a mixing bowl.

7. Combine the squash with the chives, sour cream, 1/8th cup of cheese and salt and pepper to taste.

8. Transfer the mixture to a baking dish and sprinkle with the remaining cheese.

9. Bake for 30 minutes.

10. Cool for a few minutes before serving.

Once your squash has cooled for 15 minutes or so, use a fork to scrape the squash, and it will separate into spaghetti like strands.

After cooking your squash, you can allow it to cool 15-20 minutes before scraping the individual spaghetti strands from the interior.
