Spaghetti Squash Pancakes

 

Ingredients -

6 cups Spaghetti Squash, cooked by your favorite method and separated into strands
1/3 cup All-Purpose Flour
1/2 cup grated Parmesan Cheese
4 tablespoons Butter or Olive Oil
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
Sour Cream and Apple Sauce for garnish

 
Preparation:

1. Add the squash to a large bowl.

2. Add the flour and parmesan cheese and mix well to combine.

3. In a large skillet, melt the butter or oil over medium-high heat.

4. Add 1/4 cup of the squash to the skillet, and form a thick cake.

5. Repeat the same process with the remaining squash.

6. Cook the squash cakes until they are lightly browned on the bottoms, turning over to cook the other side.

7. Sprinkle the cakes with salt and pepper.

8. Serve with sour cream or applesauce, if desired.
