Spaghetti Squash Pie

 

Ingredients -

1 medium Spaghetti Squash
2 unbaked (9-inch) Pie Crusts
1-1/2 cups Granulated Sugar
1 tablespoon Cornstarch
1/2 cup Butter, melted
4 Eggs Yolks, beaten
1 cup Whole Milk
2 teaspoons Vanilla Extract
1/4 teaspoon Salt
Whipped Cream (optional)

 
Preparation:

1. Preheat the oven to 350 degrees.

2. Add 2 inches of salted water to a pot.

3. Add the squash and cook for 20 minutes or until tender.

4. Drain and allow to cool.

5. Cut the squash in half and remove the seeds and membrane.

6. Remove the flesh into strands with a fork.

7. Place half of the flesh into each of the unbaked pie crusts.

8. Spread the squash evenly over the bottom.

9. In a mixing bowl, combine the remaining ingredients except for the whipped cream.

10. Mix well to combine.

11. Pour half of the mixture over each of the pies.

12. Bake for 30 to 35 minutes or until the center has set.

13. Top with whipped cream, if desired.

14. Serve and enjoy.
