1. Poke holes in the squash with a fork.
2. Place the squash on a plate and microwave on high until soft which takes about 10 minutes.
3. Set the squash to the side for 5 minutes then cut in half.
4. Scrape out the squash and reserve one shell.
5. In a medium bowl, combine the squash with the cheeses, tomatoes and parsley.
6. Mix well.
7. Put the squash mixture back into the shell and reheat for 2 minutes in the microwave. |
