Spaghetti Squash with Parmesan Cheese

Spaghetti squash cooked and tossed with fresh cheeses, plum tomatoes and fresh parsley.

Ingredients -
3 pound Spaghetti Squash
2 tablespoons grated Fresh Parmesan Cheese
1/2 cup Shredded Mozzarella Cheese
2 chopped Plum Tomatoes
1/4 cup chopped Fresh Parsley
 
Preparation:

1. Poke holes in the squash with a fork.

2. Place the squash on a plate and microwave on high until soft which takes about 10 minutes.

3. Set the squash to the side for 5 minutes then cut in half.

4. Scrape out the squash and reserve one shell.

5. In a medium bowl, combine the squash with the cheeses, tomatoes and parsley.

6. Mix well.

7. Put the squash mixture back into the shell and reheat for 2 minutes in the microwave.
