Spaghetti Squash with Tomatoes, Peppers and Cucumber

 

Ingredients -

2 Vine-Ripened Tomatoes, seeded & diced
1 cup diced Celery
1/2 cup diced Red Bell Pepper
1/2 cup diced Yellow Bell Pepper
1 cup peeled, seeded & diced Cucumber
3 tablespoons Capers
1 Shallot, diced
1/8 teaspoon Ground Black Pepper
2-1/2 tablespoons Balsamic Vinegar
1 tablespoon Hot Mustard
2 tablespoons minced Fresh Basil
4 cups cooked Spaghetti Squash

 
Preparation:

1. Combine the first 8 ingredients in a large bowl.

2. Whisk together 2 tablespoons vinegar, mustard and herbs in a small bowl.

3. Pour the vinegar mixture over the vegetables.

4. Toss gently to coat.

5. Cover and refrigerate for 1 hour.

6. Toss the vegetables and adjust the seasonings as desired.

7. In individual serving bowls, add 1 cup of squash and 1 cup of marinated vegetables.

8. Toss gently to combine.

9. Serve and enjoy.
